Spinach Salad with Warm Bacon Dressing

Tonight we made an amazing Spinach Salad with Warm Bacon Dressing. It’s a great choice for those who love bacon, but want to eat healthy too. We try to take turns in the kitchen. If one of us cooks a lot one night, the other will take over the next night, but lately, I have been so busy with my internship and assistantship that I hardly have time to focus (never-mind studying for the NCE – National Counselor Exam). Carlos has been nothing but supportive in helping with the cooking chores while I study. What an amazing husband! I must say that I even it out by choosing the recipes for the week, making the grocery list, and grocery shopping each week. I’d say we do a pretty nice job complimenting each other.

Spinach Salad with Warm Bacon Dressing

This recipe uses bacon, Canadian bacon, mushrooms, onions, olive oil, cider, cider vinegar, mustard, and salt and pepper.

What’s awesome about this recipe is that Canadian bacon tastes very similar to bacon when pan fried but has less calories and more protein than bacon.

A nice addition to this recipe is some garlic bread. We make our own by placing a light layer of butter on wheat toast and adding garlic powder/garlic salt. Then broil for a few minutes on each side.

One of our new favorite books is “The Food You Crave: Luscious Recipes for a Healthy Life” by Ellie Krieger. She has several books that include delicious recipes.
