This recipe is probably on our menu every other week. It is so light and refreshing. The goat cheese really adds flavor and richness to the salad. You will not be disappointed. I first found this recipe in Denise Austin’s Daily Dozen. The book has great recipes and exercise tips for living a healthy lifestyle.
