Not to brag, but my  mom made the best guacamole when we were growing up. I have modified it slightly to reflect my tastes. Carlos and I like to make guac as an appetizer when we make chicken fajitas. Then we are sure to add some to the fajitas! It also pairs well as the condiment of choice for sandwiches and wraps. Throw that mayonnaise away because guac has taken it’s place as a more delicious and healthier choice!

I love Avocados! (Espinosa Kitchen)



  • 2 ripe avocados (this means they are slightly browned and soft – if they are too soft and mushy, they are old)
  • 1 tablespoon lime juice
  • 1/2 cup lite sour cream
  • 3/4 cup salsa
  • a sprinkle paprika (optional)


Cut the avocados in half and pull the pit out. Scoop out all avocado with a spoon and mush with a fork in a medium bowl. Add rest of the ingredients and mix. Enjoy!
