Autumn Vegetable Curry

Right now we have about 1/2 n ice cream container full of this in our fridge. The recipe makes that much! It is delicious and fresh and not extremely rich like many other curry recipes. Sometime it is difficult to make a new recipe on a weeknight, but when we are done, it is nice to have spent that time together in the kitchen and catch up on our day. Needless to say, we haven’t been keeping up with our favorite TV shows, but actually, I haven’t missed!

Autumn Vegetable Curry

Ingredients include: onion, garlic, ginger, curry powder, cayenne pepper, canola oil, tomato paste, vegetable brother/stock, light coconut milk, cinnamon, pepper, cauliflower, sweet potatoes, carrots, tomatoes, lime zest, lime juice, chickpeas/garbanzo beans, baby spinach, salt, cilantro, and brown rice
