Remember the green bean casserole made for Thanksgiving? Want to try a healthy and more delicious version? Carlos and I made this this week and were pleasantly surprised. We didn’t make it as a side, but as our main meal. We fought over the left-overs for lunch it was that good!
Shallots are delicious, but can be expensive. We have often substituted red onion instead of shallots. For this recipe, we used half shallots and half red onion. If you are eating onions raw, we have found that shallots are less robust. When cooking, red onions still provide a very similar taste.
Ingredients include: olive oil, shallots, green beans, mushrooms, garlic, thyme, 1% milk, flour, Parmesan cheese, parsley, nutmeg, salt and pepper, and cooking spray.
