This week has been really busy with a job interview for me and Carlos’ counsel meeting on Monday. We just didn’t get around to cooking as much as we would have liked to. Although, we rarely cook Wednesday nights as that is my long night at the gym with SH’BAM at 5:30 p.m. and Body Pump at 6:35 p.m. On these nights we tend to split a $5 foot-long from Subway. It is the night before we leave for Cortney and Rick’s wedding and we are taking a little time for ourselves. Here is a quick recipe for corn bread. I’m not exactly sure how it compares to my dad’s recipe, but it’s still a keeper!
Ingredients include: flour, yellow cornmeal, sugar, baking powder, salt, skim milk, canola/vegetable oil, and eggs.
Carlos likes to add honey to the top.
