Orzo with Smokey Tomato Vinaigrette

For starters, we used Arborio rice instead of Orzo. In our supermarket, Orzo is so expensive and we can get Arborio rice for cheaper – and I really like the taste of it when it’s cooked right!

Orzo with Smokey Tomato Vinaigrette

Ingredients include: chicken broth, Arborio rice, cherry tomatoes, fresh basil, apple cider vinegar, olive oil, honey, salt and pepper, and Parmesan cheese.

Cooking the Arborio rice:

Combine 1 cup of arborio rice and 1 1/2 cups reduced-sodium chicken broth in a heavy sauce pan and bring to a boil. Stir rice continuously and reduce heat to medium until liquid is absorbed. Add 3 more cups of broth 1 cup at a time. Make sure you stir until the water is absorbed each time. The entire process should take about 20 minutes.

Hint: Let me just say that cooking Arborio rice with chicken broth adds so much flavor. You can cook it in water, but it’s not going to taste as good.
