So we were really lazy one night and didn’t feel like cooking an actual meal. I decided to put together a salad based on what we had left over in our fridge. It was actually so incredibly tasty, that I had to write down what the ingredients were so I could make it again! Luckily, I like to share, so here you go!
- 3-4 Tablespoons Newman’s Own Light Balsamic Dressing
- 1 yellow/orange/red pepper (or combination of any/all)
- 4 oz. sliced mushrooms
- 5 oz. chopped spinach
- 1/4 chopped white onion
- 1 shredded carrot
- 1/4 cup crumbled feta cheese
- 2-3 Tablespoons salted sunflower seeds
Directions: Mix in a large bowl and enjoy!
