I seriously can’t get enough risotto these days. We made this the other night (for the fourth time I believe in the last several months).
Ingredients: olive oil, shrimp, garlic, red pepper flakes, dry white wine, fresh basil, yellow onion, grape tomatoes, salt and pepper.
We combine this recipe (link above) with risotto to complete the dish. We also add 1/2 cup diced yellow onion to the saucepan to saute before we begin cooking the risotto.
Cooking the Arborio rice:
Combine 1 cup of arborio rice and 1 1/2 cups reduced-sodium chicken broth in a heavy sauce pan and bring to a boil. Stir rice continuously and reduce heat to medium until liquid is absorbed. Add 3 more cups of broth 1 cup at a time. Make sure you stir until the water is absorbed each time. The entire process should take about 20 minutes.
