One of my friends came to visit recently and we needed something to snack on while we were making dinner. I love tomatoes, so I thought a caprese salad would be a good choice. It definitely was amazing. And the bright side: it’s very easy to make.
- Fresh basil
- Roma Tomatoes
- Fresh mozzarella
- Balsamic vinegar
Directions: Drizzle a fair amount of pesto on a plate or serving platter. Slice the tomatoes and place on the plate. Add a piece of mozzarella cheese to each tomato slice. Top with a fresh basil leaf. Finally, drizzle balsamic vinegar over the dish.
