It’s Friday! And it’s a 3-day weekend. I couldn’t be happier. Hopefully the chair for my office will come this week – been having some issues with Ashley Furniture and the delivery of my chair (not cool!). We have a grill-out tomorrow and house-guests this weekend, so it will be an eventful weekend. We are looking forward to a relaxing evening of cooking, conversation, and perhaps a night bike-ride after the sun goes down. (If you haven’t done this… it is really exhilarating!) Here is our recipe for tonight:
Ingredients: black beans, corn, cilantro, red onion, garlic, cheese, taco seasoning, whole wheat tortillas.
The changes we made to the link above are: 1-1 1/2 cups cheese (2 cups is A LOT), about 2 tablespoon taco seasoning (a whole packet is A LOT), and we used our favorite wheat tortillas.
We served these with sour cream, salsa and mashed avocado.
Tip: to have them taste yummy until they are all ready to eat, burn them a little. 🙂
