After not feeling well the last couple days, it was nice to get back into the swing of things today. Things have been stressful at the new job as I try to figure things out. Luckily, I have had support from coworkers, so that has been a relief. Carlos has also done what he could to help me through this transition. AND he came grocery shopping with me tonight – which is a rarity! Here is our choice for dinner tonight. We decided to add mini potatoes to original recipe. Kind of an odd choice actually since it was over 90 degrees today but it will still taste delicious in our cool apartment!
Ingredients: Marsala wine, cornstarch, flour, pork loin chops, salt and pepper, olive oil, (we changed the prosciutto to canadian bacon), onion, oregano, chives, and low-fat milk.
