Whenever I am in a hurry, I find it too easy to grab carbs to go. This is my new favorite snack/meal on the go and it is so easy to prepare ahead of time.
Healthy Greek Salad
- black beans, rinsed
- red onion, cut into pieces
- tomato, cut into pieces
- green pepper, cut into pieces
- cucumber, cut into pieces
- feta cheese, crumbled
- Greek Vinaigrette Dressing (I used Wishbone) (you can also make your own dressing using olive oil, lemon juice, red wine vinegar, salt and pepper)
Directions, place in container and shake to mix.
Note: I didn’t give specific amounts because I never measure. Just eyeball it. If you make more than you can eat, just save it for later.
