Gluten-Free Chicken Enchiladas

This gluten-free diet isn’t too bad. I’m learning to like the gluten-free options I have and am trying new recipes. We leave tomorrow for Hayward, WI, to visit some friends. Enchiladas always allow enough food for the evening and the next day, so we will be able to eat something before leaving to drive the 3 hours north.

Hello world!

There are a few things in life that deserve attention. Although overall happiness is one of those things, I feel that cooking healthy creates happiness and well-being. I also believe that spending time in the kitchen with a spouse while cooking healthy is necessary and helps maintain a loving and healthy marriage. I am a licensed school counselor and am working to obtain a national certification as a counselor shortly. Maintaining a marriage is something that come easily to me and my husband. Cooking (almost) every night is one of those things that keeps us healthy and happy.
